Scallop Mousse Tortelli
The inspiration for this dish was to create something unexpected by taking familiar flavors and combining them in different ways. Normally, you’d see scallops, butter, lemon, pasta, blah blah BLAH. So boring! I made this saffron pasta and really leaned into the spices of the Middle East, while keeping familiar elements and, by doing so, I created a spectacularly unique dish.
